THE LAST STEP

These ribs, without a doubt, were the finest ribs I have ever consumed.
All other ribs I eat will be judged against these.
No sauce required. There flavor and texture stands alone.
A semi dry rub was used before smoking them for 4 hours using pecan and other wood smoke, then wrapped in foil and cooked for another hour and a half.
I know some rib wizardry must have been involved also.
